don't like rice but like sandwiches?
this is a spin-off meal from my previous post. the previous post is also the only post until this post. perhaps i should just say "the post".
this is a spin-off meal from the post. i understand that you, like me, enjoy the comfort of eating delicious things between two slices of bread. it's like dress-casual wear. or dress-cazsch (not sure if that spelling is correct but i have no idea how to spell it out). dress-cazje. that one was too awkward. if you're uncertain your seemingly ultra classy meal is, infact, ultra classy (as anything paired with rice is), then covering it up with a sandwich will tone down that arrogant culinary asshole in us all.
still boil an ear of corn. this is still iowa. remember. right.
okay.
saute with evoo, sea salt, pepper: chopped onion, green pepper (i ran out of that delicious purple pepper :o ), and zucchini.
when lightly browned (i like crisp veggies), turn off heat.
while the sauteing is happening, make yourself useful by lathering a thick layer of hummus (protein) onto one side of bread (i enjoy grainy breads, but choose whatever because i obviously can't tell you that grainy breads blow any white bread of of the water).
carefully add the veggies atop the hummus side of bread (because hummus is sticky and will help the veggies from toppeling on the ground because, and this is if your like me, you'll for some reason put the bread on the edge of the table and probably saute too many veggies).
spoon on some of that fruit salsa. yes this sandwich is extreme. and yes i would have added cheese if i had any.
put the sandwich back on the frying pan for some light toastage. carefully turn the sandwich over, which will probably be very messy. don't be too proud.
take off the sweet corn from the burner.
place sandwich and corn on a plate and devour.
yes, i would be more of a grown-up if i didn't cut the corn in half: my saucepan is too little.
oh the agony.
